Making good Tea

A. Making Good Tea 

Either a traditional Chinese Yi-Xing clay teapot or a large western style teapot will be fine for brewing tea.

For the first serving, the tea leaves should be steeped in boiling water for 45 seconds. An additional 10 to 20 seconds should be incrementally added to the time interval for each additional serving of tea. This method requires a small clay pot 20%-filled with tea leaves.

When using a large tea kettle, 1 gram of tealeaves should be added in every 50 cc of water. The tea leaves should be steeped in boiling water for 3 to 5 minutes.

1, Warm teapot by rinsing with hot water.

2, Steep 1 TSP. (3g) of tea per cup (6 oz.) of hot water for 2 minutes, then enjoy!

3, The same tea leaves can be steeped 3-5 times.

What Are Some Tips for Brewing Tea?

The temperature of the water is very important. In general, use freshly boiled water, just off the stove for dark, strong teas. With lighter teas--such as green tea, Pouchong, green oolong--let the boiled water cool for five minutes--let it cool to 175-194 degrees Fahrenheit, or 80-90 degrees Celsius.

Quantity: use an amount of tea that is equivalent to 2/5 of the size of the pot. (Whether Yi-Xing ware or an ordinary pot) This rule applies to all varieties of teas. When making a single cup, use a level teaspoon for jasmine, Pu-Erh, or black tea, and a heaping teaspoon for oolong, Ti Kuan Yin, or green tea. Use two teaspoons for Pouchong or green tea. You'll see that some teas are densely packed, so use slightly less per cup.

Timing for the perfect cup: steep (or brew) oolong tea, in Yi-Xing pots for about one minute. With oolong tea in an 8 oz. cup, brew three minutes. Jasmine in an 8 oz. cup, also brew three minutes. For black tea in an 8 oz. cup, two to three minutes, and for loose green tea in an 8 oz. cup, three minutes. When using tea bags, follow the instruction given, but in general, brew for a half minutes.

Pour boiling water over the tea and let it steep for abut two minutes. (Steep longer for a stronger tea) Then take out the infuser and enjoy a delicious cup of tea. D. Yi-Xing Clay Teapot

Place about one teaspoon of tea in the cup (with oolong or Pouchong tea, use a heaping teaspoon--for black or jasmine tea, a level teaspoon). Add boiled water and steep for two to three minutes. This beautiful porcelain cup is the time-honored way of serving tea in Chinese culture.
